How many Russian salads do we know?

In the book by P.I. Aleksandrova-Ignatieva "The Practical Basics of Culinary Art" there are only two salad recipes - salad from ruffs and olivier. Elena Molokhovets also offers only a few salad recipes, for example, green bean salad.
However, a dish called "Russian salad" is popular in Europe and America, especially on the eve of the New Year holidays. Most often, this is a potato salad with vegetables, dressed with mayonnaise. Sometimes meat products are added to it, and mayonnaise is replaced with vinaigrette dressing.
Indeed, in Russian salads, boiled vegetables, meat, poultry and game, fish, mushrooms are most often used, and salad greens more often act as decoration. That is why these salads are very satisfying.
The whole variety of vinaigrettes and olivier, herring under a fur coat, cod liver salad, "Provencal" sauerkraut, "mimosa" - all these salads can be called Russian salads for a long time.

For 6 servings we will need:

  • Potato - 5 kg
  • Onions - 50 grams
  • Green peas (canned) - 200 grams
  • Pickled Cucumbers - 100 grams
  • Fresh mushrooms - 100 grams
  • Ham (can be replaced with boiled sausage) - 50-70 grams
  • One medium apple
  • One small carrot
  • Sour cream and mayonnaise to taste
  • Salt, herbs to taste

Cooking:

First of all, you need to prepare vegetables, so boil carrots and potatoes over medium heat, cool and peel. We put a pot of water on the fire and, as it boils, we throw mushrooms into it and cook until tender. Cool, chop finely. Onions must be finely chopped or grated.

So, cut into cubes an apple, ham, carrots, potatoes and pickled cucumbers, put in a salad bowl. Next, pour the canned green peas there and put the chopped mushrooms with chopped herbs. Mix everything thoroughly with mayonnaise and sour cream, salt to taste. Garnish with sprigs of greenery and leave in the refrigerator for a couple of hours. Great Vitamin Salad Ready!

Cooking progress:

That's practically it, the salad is ready.

To prepare it, you must have:

  • a jar of canned sardines or tuna,
  • 100 grams of rice
  • half a dozen hard-boiled eggs,
  • 3 boiled carrots,
  • a bunch of green onions,
  • salt,
  • ground black pepper,
  • mayonnaise.

To make this dish, you need to prepare a deep salad bowl or a small pan. Boil the rice, cool it and form a bowl. Put it on the bottom of the salad bowl and roll it. Then spread it with mayonnaise. Open a can of canned food and lay out a layer of fish, again greased with mayonnaise. Next, lay a layer of finely chopped green onions, seasoned with pepper, and grease again. Peel the eggs and naturally separate the whites from the yolks. Grate the proteins, mix with mayonnaise and salt, and then lay out with the next layer. Then grate the carrots over the salad bowl and press this layer on the salad with your hand. Lubricate the carrots with mayonnaise should be very carefully with a thin layer. Then take the yolks and grate them, sprinkling the entire surface of the salad. Cover the finished masterpiece with a lid or cling film and keep in the refrigerator for at least 2 hours. Sprinkle with chopped herbs before serving.

What Russian does not know epics about Sadko? A festive dish was even named in his honor. To please their loved ones, you will need the following ingredients:

  • 1 pickled cucumber
  • half a head of white cabbage,
  • 2 slices of slightly salted herring,
  • 4 slices of black bread,
  • a bunch of green onions,
  • clove of garlic
  • mayonnaise,
  • parsley
  • fresh lettuce
  • chopped cilantro,
  • dill greens.

Wash the cabbage with cold running water. Chop it and grind with salt. Cut the bread into small cubes and sauté over low heat. Finely chop herring fillet and cucumber. Grind herbs and garlic, then add them to cabbage, herring and cucumbers. Stir them with 2 tablespoons of mayonnaise. Combine the remaining ingredients and the remaining 2 tablespoons of mayonnaise. Put lettuce leaves on a plate, spread lettuce on them, pour the sauce that you got and sprinkle the toasted bread on top. Now it is quite possible to serve.

"Russian forest"

The vast territory of our country is forest. That is why the Russian people have long consumed his gifts. In this regard, we recall the mushroom treats for the festive table.

For this dish, take:

  • 200 grams of salted mushrooms,
  • 2 medium pickled cucumbers,
  • 1 onion
  • boiled potatoes (2 pcs.), carrots (2 pcs.), and beets (1 pc.),
  • mayonnaise.

Mushrooms thoroughly washed. If necessary, remove the saturation with salt, soak, and after 15 minutes, rinse. Cut them into medium cubes. Chop the onion into small pieces. Grate boiled vegetables, do the same with cucumber. Then we lay out the layers, smearing them with mayonnaise, in this order: mushrooms, onions, cucumbers, potatoes, carrots, beets. On top of the salad we decorate with chopped herbs. Eating such a dish, you immediately remember the forest, its freshness and colors.

"Vitamin"

The recipe for this dish is also not particularly difficult. And the aroma inherent in vegetables will give a summer mood in the winter. For cooking, take 500 gr. cabbage. Cut it into small strips. Putting it in a bowl, salt and thoroughly mash it with your hands so that juice appears on the surface. For acid, peel the apple and be sure to grate the latter on a coarse grater. Do not rush to immediately put it in a bowl, and pour juice from half a lemon so that the apple retains its color. For harmony of taste add sweet carrots, grated on a fine grater. Stir the vegetables by watering them with vegetable oil.

Salad can be stored in the refrigerator for almost two to three days, covered with a lid or cling film. Over time, vegetables let in a lot of juice, but this does not affect the taste at all.

Beetroot Salad with Cheese

Boil 600 gr. beets, cool and grate. Pass 2 cloves of garlic through the garlic. Then sprinkle it all with mayonnaise. 150 gr. grate hard cheese on a coarse grater and add to the salad. Stir well and serve.

Radish Salad with Eggs

Another Russian salad suggests the presence of fresh spring vegetables. However, in any supermarket you can find them even in winter. Take 400 gr. radish, trim the ponytails and cut it into rings. Also, in rings, cut 5 boiled eggs and finely chop a bunch of dill. Salt, season with sour cream and, of course, mix well.
