Violation 1: Grinding

This is one of the main reasons for the awful taste of capsule coffee maker drinks. Roochi told Tech Insider that by the time you get the coffee capsule he’s already aging.

Nuchi says the most egregious is the fact that coffee could be ground days, weeks, or even years before it was in your cup. The process of grinding the beans immediately exposes the coffee to oxygen, triggering a chemical reaction that “sucks” the taste and aroma. The oxidation reaction makes the taste and aromatic qualities of coffee degrade - this is the same reaction as a result of which the steel begins to rust.

Nuchi says: "It begins to deteriorate immediately after you grind it." Therefore, all barista recommend making coffee immediately after grinding the beans.

While Keurig is trying to prevent further degradation of taste and aroma by sealing ground coffee in vacuum capsules (and probably adding chemical preservatives to it, even though Keurig declined to comment on whether they do it or not), the damage from oxidation could already be inflicted coffee even before it was sealed.

Violation 2: Complex packaging

When roasting green coffee at high temperatures, a complex mixture of minerals, carbohydrates, amino acids, proteins, lipids, water and caffeine merge together inside the grain, giving it an irresistible nutty flavor and coffee aroma.

As in the case of grinding, coffee beans also begin to experience the negative effects of air and lose their taste and aroma. That is why not all, but very many coffee roasters recommend consuming grains as quickly as possible after roasting, in order to get the freshest taste of the drink at the peak of its “shape”.

Freshly roasted coffee is a particular problem for the packaging process, because immediately after the roasted beans have cooled down, they begin to emit carbon dioxide contained in them, and this process can last from several days to several weeks. It proceeds most intensively in the first few days after roasting and gradually weakens in the following weeks.

Carbon dioxide in itself is a serious problem for manufacturers who want to pack freshly roasted and ground coffee in sealed containers as quickly as possible. Active CO2 emissions from whole or ground grains can cause the packaging to inflate or even explode. Many companies solve this problem by integrating into the packaging a special degassing valve that works only in one direction and releases CO2, which cannot be done in the case of sealed K-Cup capsules.

To avoid this problem with the capsules, manufacturers will wait until the CO2 finally ceases to be emitted, which may take up to 15 days before packing ground coffee. Every day of this expectation makes coffee more and more aging as it is constantly exposed to air.

I asked Keurig how long they wait after roasting and grinding the grains before packing them into capsules, and what they think about degassing, but they refused to answer these questions. Given that the contents of their capsules do not emit CO2, it can be judged that they wait days or even weeks after roasting to be sure that the coffee has stopped the active release of CO2 before it enters the capsule.

Violation 3: Scant Marking

The situation is aggravated by the fact that, according to Nuchi, you do not know at all about the origin of coffee and the date of its roasting or grinding. Therefore, it becomes almost impossible to find out how fresh and high-quality product you received.

I asked the Keurig public relations team about which grains and where they are used from, and they again refused to answer.

A representative of Keurig, who did not want to be named, said that even the Keurig staff themselves did not know when a particular batch of coffee was roasted and ground. Each box has only an expiration date, and this is the only way to verify freshness (which, in fact, says little).

According to Nuchi, coffee can be in a sealed K-Cup for months or even years before the capsule gets into your hands. And the complete lack of information about the origin of coffee beans makes impossible any conclusions about its quality.

“I believe that the less transparent their packaging, the lower the quality of their contents,” Nuchi said. “In the coffee industry, it’s noteworthy that manufacturers are proud of the origin of the beans and when they were roasted.” The absence of this fact in Keurig can only speak of the mediocre quality of the product.

Violation 4: Warm water

Besides the quality and age of coffee, another aspect that seriously affects the taste of Keurig coffee machines is the fact that they do not heat water to a temperature sufficient for optimal extraction and taste.

According to their website, Keurig coffee makers heat water to 88 degrees Celsius, but the National Coffee Association (NCA) recommends a range of water temperatures between 90 and 96 degrees for making coffee.

The Association also believes that brewing coffee at water temperatures below 90 degrees Celsius results in a “flat, underextracted coffee taste”.

Violation 5: Brewing too fast

Finally, the last problem Keurig devices and other capsule coffee makers are exposed to is the time that coffee interacts with water.

Keurig is proud that their coffee makers will prepare a cup of hot coffee for you quickly.
But there are things you should not rush with, and a cup of delicious coffee is one such thing. The National Coffee Association recommends for the preparation of a cup in drip coffee makers the interaction time of ground grain with water for about 5 minutes.

Keurig brews coffee in seconds, resulting in a flat and mild taste in the cup, especially when combined with a water temperature lower than recommended.

Will the situation change for the better?

This question is hard to answer. Probably, thousands of studies have been devoted to improving capsule coffee machines - after all, it is such a lucrative business that Keurig alone in 2015 earned $ 4.5 billion from the sales of its coffee makers.

But in fact, it is unlikely that capsule coffee can ever really compare with the rich taste of a freshly brewed cup. Mostly because the coffee in the capsules is already ground, says Noochi. "I have no idea how to overcome this."

There are many ways to preserve the freshness of beans, for example, rinsing them with chemicals like nitrogen, but Nuchi believes that even such measures may not have an effect on ground coffee.

Companies offer Cafe Grumpy to make capsules for capsule coffee machines with their coffee, but for the reasons described by Roochi above, Cafe Grumpy does not plan to do this.

It turns out that the biggest advantage of capsule coffee machines becomes their biggest drawback when it comes to the taste of the drink. Coffee, which is prepared quickly and in pre-prepared capsules, can never be compared with fresh.

How to use a geyser coffee maker

In geyser coffee makers, the drink is prepared by steam pressure. They got their name for their similarity with geysers in appearance and principle of operation.

Current geyser coffee makers are mainly made of stainless steel, aluminum, ceramics and can work both from the mains and can be heated on the hob.   3. Pour ground coffee into the filter to the brim. Do not tamp the powder in an attempt to make coffee stronger, water will pass poorly through an overly dense layer.
  4. Remove excess dry coffee from the rim of the filter.
  5. Replace the filter and attach the upper container.
  6. Put the coffee machine ready for use on the stove or plug it into a power outlet.
  7. Wait for the hiss that accompanies the end of the cooking process.

For geyser coffee makers, it is recommended to use medium or coarse coffee.

To make the coffee tastier, pour purified natural or filtered water into the coffee maker, take good-quality grains of coffee and grind it just before brewing.

Keep your safety while using the coffee maker: tightly fasten the containers together, do not open the lid until the cooking process is completed.

With continuous use of the geyser coffee maker, it is important to disassemble and wash the containers after each use (when they cool down), thoroughly clean the coffee grounds filter, monitor the condition of filters and gaskets. Regular care will allow you to use the coffee maker for many years.

A little secret: coffee plaque from the walls of the coffee maker does not need to be cleaned. For brewing coffee, the optimum temperature is 90-95 ℃, but in many models of drip coffee makers, it takes a long time to wait for such hot water, due to which the drink turns out to be too bitter.

Before the preparation process, “run” the coffee machine with water in the idle mode, without pouring coffee powder. Then pour the resulting hot water back into the tank and proceed directly to brewing coffee.
