  • 3 ripe bananas
  • 200 gr whole grain flour
  • ¾ cup chopped flaxseed
  • ½ cup xylitol and erythrol
  • 2 eggs
  • 1 teaspoon: baking powder and vanilla extract (or sugar)
  • 1.5 tablespoons cinnamon
  • 2 tablespoons of coconut oil (melted) or rapeseed
  • 200 ml of water
  • 2 tablespoons of oatmeal

  1. Preheat the oven to a temperature of 180 degrees. Prepare a mold - best a cupcake or small square shape. Lay out the mold with baking paper.
  2. Put all dry ingredients except oatmeal in one bowl. In another bowl, mix crushed bananas with eggs, butter, and water.
  3. All components - dry and wet - mix with each other. Mix everything until the consistency of the test.
  4. Put the finished banana dough in the mold. Line up. Sprinkle oatmeal and a teaspoon of sweetener on top.
  5. Place the banana bread in a heated oven. Bake for 50-55 minutes.

Use fried sugar

Replace regular granulated sugar with fried sugar. To make bread according to this recipe, you do not need to cook fried sugar for a long 5 hours, going through the whole process of caramelization. It will be enough to calcine the sand in just one hour.

One hour will be enough to enhance the natural sweetness of sugar and a little effort to highlight the caramel notes. Using fried sugar does not change the chemistry of the dough. Use coconut oil.

Most banana bread recipes recommend vegetable oil. Mostly because it's pure fat. It envelops the threads of gluten, giving the crumb splendor. Bread becomes more crumbly and saturated with buttery aromas.

Unfortunately, liquid oils sometimes make bread heavy, wet and greasy to the touch.

How to avoid this? - It is necessary to use oil that remains solid at room temperature. That is why we use coconut oil. It melts only at 26 ° C, protects your bread from drying out quickly and its tropical aroma expressively improves the fruity-floral taste of a banana.

If you do not find coconut oil, replace it with warm ghee.

Use well ripened bananas.

Unripe bananas have very little sugar and too much starch. Because of them, banana bread will be too crumbly.

In yellow ripened bananas, in my opinion, just the perfect ratio of sugar and starch. Using them you will get wonderful, light and airy bread.

If you put overripe, blackened fruits in the dough, then the baking will be dense and slightly sticky. The dough will turn out too liquid and this will worsen its rise.

Therefore, I always take bananas on which spots begin to appear, or greenish-yellow bananas to which I use the technique of fast 30-minute ripening of green bananas at home.

Nuts must first be fried.

I put nuts or seeds in almost all my pastries. And without exception, I prefer to pre-fry.

Pre-calcination not only enhances the nutty flavor, but also ensures that the slices of nuts in my baking remain crispy. They will crunch even if you put them in a very wet dough.

Use whole grain flour.

Use whole grain wheat flour. In addition to being useful, such flour absorbs more moisture. What does this give us?

Most often, buttermilk or milk with lemon juice is used to make banana bread. But they are much thinner than Greek yogurt. If you use plain or low-fat yogurt, your dough will turn out denser, it will be better to rise in the oven. The loaves turn out to be high and keep their shape perfectly.
