In modern Russian cuisine there is a similar pie, where sour cream is used in the filling instead of butter. For some reason it is called Tsvetaevsky. Its name is also associated with two sisters - Stephanie and Carolina Tatin, who kept a tavern in the French town of Lamotte-Bevron and prepared meals for the guests themselves. If you want an apple pie without excess sugar, sour cream, butter and other extra calories, prepare a simple tart:

French open apple pie

1 cup flour
70 g butter,
2-3 apples
3-4 tbsp apricot jam
salt, sugar, cinnamon - to taste.

Put flour and butter in a food processor, add salt and sugar, 2-3 tablespoons of ice water, knead the dough. Grease a mold with oil, distribute the dough on it, gently squeezing it, and put in the refrigerator for several hours.   • flour - 3 tbsp. (250 gr.)
  • butter at room temperature - 200 gr.
  • sour cream - 4 tablespoons
  • sugar - 1 tbsp.
  • vanillin - on the tip of a knife
  • salt - 1/4 tsp

For filling:

  • apples - 3 pcs.
  • sugar - 1/3 tbsp.
  • cinnamon - 1 tsp
  • children's cottage cheese or curd mass - 100 gr.

1. Remove the oil from the refrigerator in advance to soften it. Pound the already soft butter with sugar until smooth.

2. Add a pinch of salt, vanillin if desired and sifted flour. Start kneading the dough. First, stir with a spoon when the mass is too tight - start working with your hands. At this stage, the dough should turn out soft, crumbly, similar to wet sand.

3. Add sour cream and knead well again. Collect the dough in one bun. It will be soft, greasy, not elastic. If you make a dent, it will remain.

4.Divide the dough into two halves, wrap them in cling film and place in the freezer for 10-15 minutes. This is necessary so that the lumps become hard and can be grated.

5. And while you wait, prepare the filling. Cut the apples into 4 parts, remove the seeds and cut into thin slices. Mix the fruit slices with sugar, cinnamon and curd.

6. Cover the baking sheet with parchment or foil. Take one half of the dough and grate it on a coarse grater. Spread all the small pieces over the entire surface of the baking dish.

7.Fill the apple filling on the base, and rub the other half of the dough on top. At this point, the oven should be preheated to 180 °. Put the cake to bake for 30 minutes. On top of the dough should become rosy.

Charlotte in the classic version is made from biscuit dough with apples. There are no difficulties in cooking, the set of products is minimal. The result is a lush dough with a fruit layer. The biscuit itself is dry, but its apple juice slightly moisturizes. In general, this is a recipe for lovers of beaten sweet eggs. It is prepared simply, a mixer is definitely needed from the inventory.


  • sour apples - 500-600 gr.
  • sugar - 160 gr.
  • flour - 160 gr.
  • eggs - 4 pcs. major
  • salt - a pinch

1. It is advisable to immediately turn on the oven to heat up to 180º, because the biscuit dough should not be left for long - it will fall off.

2. In a clean and dry dish, beat all the eggs at once, add sugar and salt. Start whipping at low speeds of the mixer, gradually increasing speed. The mass should increase markedly in volume, become white. Traces of corollas will not immediately disappear, but remain for a couple of seconds. This consistency can be achieved in 10 minutes after whipping.

3. For apples, remove the core and cut them into thin enough semicircles.

4. In the beaten eggs, sift the flour in parts and smoothly stir up and down, trying not to disturb the airiness.

If you want a wetter biscuit, add a tablespoon of sour cream or melted butter (chilled) to the dough at this stage.

To fill:

1.Kill eggs in a bowl, add granulated sugar to them and beat with a mixer in a strong foam.

2. In a different container, mix the dry ingredients: flour, salt, baking powder and vanilla sugar.

3. Add the dry mixture to the eggs and stir with a spoon until smooth so that there are no lumps. Pour milk and vegetable oil into the dough, mix thoroughly again. It will turn out quite a liquid dough, it should be so.

4. Peel and cut the apples into slices, combine with the dough.

5. Preheat the oven to 200º. Cover the bottom of the baking dish with parchment and pour the resulting workpiece there. Flatten the dough a little. Bake for 30 minutes.

6. Prepare the fill. This is easy to do: mix a whisk or a fork with an egg, sugar and melted butter (it is better not hot so that the protein does not curdle). After half an hour, remove the dessert from the oven and pour over the fill.
